Stressed! Need Chocolate! Best Healthy Chocolate Chunk Cookies Ever!
So I just got the call that I will be having surgery (a simple cosmetic procedure) bright and early this Monday morning. I am super stressed about the anesthesia! All I can hear is the “freak liposuction accident” from Clueless. Call me crazy I know. It got me thinking that stress is another big factor in tired skin and the elevation of high blood pressure. Which of course, I have…that is the high blood pressure thing. Hopefully, that will go away or at least ease up a bit with the below recipe. These cookies are amazing and filled with delicious dark chocolate. Dark chocolate is rich in antioxidants called flavonoids which many studies have shown to reduce stress. Keeping it healthy, these have no eggs or dairy. They are amazing! Even approved by my picky 15 year old daughter. Enjoy!
- 2 cups almond flour (blanched)
- 1/4 tsp salt
- 1 tsp cinnamon
- 1/4 tsp baking soda
- 6 tbsp melted coconut oil
- 1/4 cup 100% pure maple syrup
- 1/2 tsp vanilla extract
- 2 tbsp water
- 1/2 cup 70% dark chocolate chunks (I used a bar and chopped up)
- 1/2 cup finely shredded coconut (unsweetened)
- Heat oven to 350 degrees F. Line a large cookie sheet with foil and spray with cooking spray.
- In a large bowl, combine almond flour, cinnamon, salt and baking soda. Use a whisk to break up any lumps.
- In another bowl, whisk the oil, syrup, vanilla extract and water.
- Add wet ingredients to dry and stir with a spatula until well combined. Fold in the dark chocolate chunks and coconut. Don't eat the batter! I had a hard time moving forward from here.
- Use a 1/4c measuring cup and scoop out 8 cookies. Flatten a little until a perfect round cookie forms.
- Bake for 15 minutes and then let cool on the sheet. Transfer to a cooling rack after 10 minutes. The cookies will be a little crumbly and a little gooey. Just the way we like it!
- Enjoy with a tall glass of regular or Almond milk!
